Antioxidant rich low calorie pumpkin curry

Today I share my recipe for pumpkin curry. This is a very nutritious curry and can be made in over 20-25 mins. Pumpkin is a very versatile vegetable which can be used in savoury as well as sweet dishes. Here I use pumpkin in my very easy recipe which is best served with chappati (indian flat bread).

So lets get started with the ingredients.

  1. one tablespoon ghee or mustard oil
  2. one teaspoon cumin
  3. one teaspoon mustard seeds
  4. one teaspoon fenugreek seeds
  5. around 2 cups of thinly sliced pumpkin
  6. one teaspoon turmeric
  7. salt and pepper to taste
  8. one tablespoon red chilli flakes

In a pan heat some ghee and add your cumin, mustard and fenugreek seeds and alow them to splutter for a min.


Now add sliced pumpkin. Also add tumeric, red chilli flakes, salt and pepper. Cook them untill they become soft (should take 15-17 mins). IMG_20170217_195650.jpg
