Today I share my recipe for pumpkin curry. This is a very nutritious curry and can be made in over 20-25 mins. Pumpkin is a very versatile vegetable which can be used in savoury as well as sweet dishes. Here I use pumpkin in my very easy recipe which is best served with chappati (indian flat bread).
So lets get started with the ingredients.
- one tablespoon ghee or mustard oil
- one teaspoon cumin
- one teaspoon mustard seeds
- one teaspoon fenugreek seeds
- around 2 cups of thinly sliced pumpkin
- one teaspoon turmeric
- salt and pepper to taste
- one tablespoon red chilli flakes
In a pan heat some ghee and add your cumin, mustard and fenugreek seeds and alow them to splutter for a min.
Now add sliced pumpkin. Also add tumeric, red chilli flakes, salt and pepper. Cook them untill they become soft (should take 15-17 mins).
Turn off the heat when done and serve it with chapati.
